Hooray! I received a response. So I initially reached out to the "Bevo Bucks" email address listed on the University of Texas' website. They got back to me They said, "Any Open Records Request seeking access to University records should be directed to the Senior Vice President and Chief Financial Officer and Custodian of Records as follows"
My next steps is to contact each of the positions listed on the e-mail. What I thought was interesting in the response was "The University is not responsible for responding to electronic mail and fax requests sent to any electronic mail address other than the email address for the Vice President and Chief Financial Officer and Custodian of Records cited above." So when I contact those individuals the University isn't responsible for responding, which is concerning for ones seeking a FOI. All we can do is hope.
